  2. Jen previous answer is correct. If you use a substitute like Smart Balance butter, it is necessary to note that the product has a higher content of water, margarine or butter. I found that my muffins or biscuits tend to be dry, if it depends only on the smart balance for moisture and flavor. Add a tablespoon of neutral oil like canola or almonds, your muffins or cookies to make moist.
